I was recently inspired by one of my favourite YouTube Creators 'The Michalaks' after they had cooked a dish from Waitrose's 'Beautifully Simple' campaign. After cooking the same recipe for my mom and Andrea I thought - wait, I should actually blog about this! Now, Waitrose has a dear place in my heart as it was my first ever job, yes that's right, I was a cashier girl.
The Beautifully Simple campaign is all about easy, effortless cooking in 3 simple steps. I am usually a 2352 step person, so this is a real treat just being able to create something that doesn't take an hour to cook. The recipe that I chose was the Mango Chicken and Coconut Rice Stir Fry, however I have had to make a slight adjustment as my mom is gluten free, I opted for a Tilda super grains which I think will still go nicely.
There are four ingrediants you will need:
- Waitrose Mango, Coconut & Lime Chicken Breast
- Tilda Super Grains (or alternative)
- Waitrose Thai Basil Leaves
- Waitrose Green Beans
This chicken smelt absolutely divine! You want to cook these chicken pieces until they are golden and cooked through. What I love about these is that they are marinaded in coconut, lime and mango with a subtle hint of chilli. The coconut flakes give the chicken a Caribbean flavour.
Once you have prepared the beans, you want to place them in a pan of boiling salty water for 4 minutes until tender, or less if you like them a little bit crunchy!
Whilst your beans are cooking, place the rice in the microwave for 2 minutes. Pick some Thai basil leaves and stir in with the rice, strain and add the beans. Top with the cooked chicken and you're ready to go! With Bank Holiday this weekend, I think this is the perfect go-to meal if you have family or friends over. It's quick and is absolutely delicious and it gives you that real summer feeling.
